Watermelon & Tomato Salad

- 1 small watermelon, sliced and cut into 3-in. rounds
- 4 ripe heirloom tomatoes, sliced
- Lettuce (optional)
- 4 tbsp. extra-virgin olive oil
- 4 tsp. aged balsamic vinegar
- 2 tbsp. Feta cheese
- Kosher salt
- Black pepper
Season tomato slices with 2 tbsp. olive oil, salt and pepper. If desired, add chopped lettuce to a platter.
Heat Evo to medium. Grill one side of watermelon slices, about 2 minutes. Transfer rounds, seared sides up, to platter.
Top with seasoned tomatoes. Drizzle each salad stack with remaining olive oil, and top each with balsamic vinegar and a sprinkle of feta.
