Brussels Sprout Slaw with Apple Butter Dressing

Looking for a healthier option to put on the table this holiday season? Look no further than this delicious Brussels Sprout Slaw – packed with both nutrients and flavor!

Ingredients

Apple Butter Dressing

  • 1/4 cup Apple Butter
  • 2 tbsp. Apple Cider Vinegar
  • 1/2 tsp. chipotle pepper, ground
  • 1 tsp. cinnamon, ground
  • 1/2 tsp. coriander, ground
  • 1 cup olive oil
  • 1 orange, zest
  • 1 tsp. Pit Boss Applewood Smoked Bacon Seasoning

Brussels Sprout Slaw

  • 8 bacon strips
  • 2 lbs. Brussels sprouts, rinsed and trimmed
  • 1/2 cup Parmesan cheese, shredded
  • 1/2 cup pecans, toasted
  • 1/4 cup pomegranate arils
  • 1 yellow onion

Directions

In a food processor, fit the bowl with a medium grating blade. Shred the Brussels sprouts and set aside.

Place the bacon and yellow onion on a grill basket and season both sides with Pit Boss Applewood Smoked Bacon Seasoning. Turn your Pit Boss Grill to 350˚F and grill for 5-10 minutes, or until bacon is crispy and the yellow onion is soft. Remove from grill and chop into 1/4 inch pieces. Set aside.

In a large bowl, whisk together the oil, apple butter, coriander, chipotle pepper, cinnamon, vinegar, orange zest and Applewood Smoked Bacon seasoning. Whisk to combine.

Assemble the salad in a large salad bowl, stir together the shredded Brussels sprouts, chopped pecans, chopped bacon, Parmesan cheese, pomegranate arils and dressing. Serve and enjoy!
