Any Day Ham with Orange Apricot Glaze
- 1 12 ½ lb. ham
- 1 cup blood orange juice, (from about 8 oranges)
- 1 cup apricot jam or preserves
- 2 tbsp. horseradish mustard
Score the skin on the ham with a sharp knife, cutting from two directions to create a diamond pattern. (This helps the fat melt and lets your seasoning and glaze in.) Cut just through the skin.
Preheat the Pacific Living Pizza Oven to 350°F.
Glaze: Whisk ingredients together until blended and set aside. During the last 30 minutes of cooking brush the glaze onto the ham. Repeat this every 10 minutes until you are ready to pull the ham out of the oven.
If using the smoke box, check the pellets/chips, top off or change flavors as needed.
Place the ham on the shelf for 2 hours. It will pick up the flavors from the smoke and be the center piece on any table.
