Schmoken a Plankake

Bananas, pancakes, chocolate and fire – a delicious combination if ever there was one. This recipe is kid friendly, so it's a great way too get the little ones out of bed in the morning.
- 1 regular cherry plank, soaked in water
- 2 large eggs, beaten
- 1½ cups buttermilk
- 1/4 cup melted butter
- 2¼ cups all purpose flour
- 1 tbsp. granulated sugar
- 1 tbsp. baking powder
- 1/2 tsp. salt
- 1/2 cup butter
- 1 cup chocolate chips
- 1 cup maple syrup
- 1/2 cup lightly packed brown sugar
- 2 ripe bananas, thinly sliced on the bias
- 1/4 cup butter, cubed
For the Sauce: Place the maple syrup into a sauté pan with the brown sugar. Heat over medium heat, stirring until the brown sugar is dissolved. Add the banana slices and continue to stir for another 4 to 5 minutes, until the syrup thickens a little. Remove from the heat and add the butter cubes. Stir well to incorporate all the butter; set aside.
For the Plankakes: Preheat the grill to medium heat.
In a bowl, mix the eggs, buttermilk and melted butter until smooth. In a separate bowl, sift together the flour, sugar, baking powder and salt. Add the egg mixture to the flour mixture and whisk until just smooth.
In a nonstick frying pan set over medium heat, melt 1–2 tbsp. of the butter. Using a small ladle, spoon the batter into the hot pan, making 4–in. pancakes. Sprinkle with chocolate chips.
Cook until the bubbles that form on the top of the pancakes begin to burst. Flip and continue to cook until the pancakes are golden brown on the bottom, about 1 to 2 more minutes. Repeat until all of the batter is used.
Place 3 pancakes down the center of the plank. Spoon a little maple syrup/banana mixture onto each one. Place another pancake on top, followed by more banana. Repeat until all the pancakes and bananas are used.
Place the plank into the grill and close the lid. Plank bake for 12 to 15 minutes or until hot throughout. Remove from grill and serve immediately with more maple syrup, butter, and melted chocolate as necessary.
