Caesar Marinated Chicken Leg Quarters

Cook Time: 45 minutes

It’s been a long day and exhaustion has set in, yet we still have to make dinner. We've all been there, right? This recipe is great, because it uses “on hand” ingredients that can be prepared quickly and easily. Serve with cold sliced tomatoes, or other desired fresh veggies, and you'll have a delicious meal with little effort!


  • 4 chicken leg quarters
  • 1 cup fresh lemon juice
  • 2 cups “lite” Caesar Salad dressing
  • 1/4 cup fresh minced garlic


Marinate chicken in remaining ingredients. Chill for at least 4 hours or overnight. Place chicken in one layer on foil lined baking dish. Preheat your oven to 400°F (205°C) and place the chicken on the rack. Bake for 45 minutes. I like an internal temperature around 180°F (82°C) because of how the meats just flakes apart at this temp. U.S.D.A. safe is 165°F (64°C) for chicken. A Maverick ProTemp Instant Read Thermometer is recommended for checking meat temps.

NOTE: The bottom stone gets “HOT” so you need to stay right with it or you will burn what your are cooking. It is recommended to use heavy cast iron or baking dishes and to use the middle shelf. You can use a stone here or not depending on your cook.
